SINGAPORE – Among the young chefs here championing local produce to reduce dining out’s carbon footprint is Eugene Chee.

The 30-year-old opened 808 Eating House in Joo Chiat Road in March. It shares the shophouse space with a more upmarket restaurant called Province, run by chef Law Jia-Jun, 28, who has a similar vision of sourcing most of its ingredients from this region.
