For those of us whose lives revolve around food, the last few months have been eye-opening. And depressing. I think of all the restaurants that have had to close because the coronavirus pandemic broke their backs. I think of the people who have lost their jobs.
And yet, I have seen businesses thrive because of owners with vision and gumption. I have seen restaurants adapt to restrictions and pivoting with grace.
